Shepherds Pie

So everyone has heard that shepherds pie isn't good.
Well.... This is good stuff. My picky eater loves it!!

Pretty healthy and pretty simple, a great make ahead
for later in the day or week or to even freeze.

1 lb Ground chicken
4 Cups of mashed potatoes
1/2 Small onion diced
2 Carrots peeled diced
1 Teaspoon ground black pepper
1/2 Teaspoon garlic powder
1/2 Cup chicken broth
2 Tablespoons flour

In a large skillet combine onion,ground chicken
seasonings  cook stirring occasionally until chicken
is done. Add carrots and mix well,
stir in chicken broth and bring to a boil, let boil
for 3-5 minutes.
Transfer meat mixture to 8 inch
pie plate and top with mashed potatoes spreading
them evenly to the outer edges of pie plate.

***If you are eating this right away then just put under the broiler for
until top is golden brown and kind of has a
crust on it.

**If eating this later in the day or week preheat oven
to 350 bake covered for 20-25 minutes. Remove from oven
and place back in the oven under the broiler for a few minutes
uncovered until the top is brown and has a crust on it.

** If pulling from the freezer you can put it right in the
oven @ 350 but would want to bake it for
35-45 minutes covered before putting it in the broiler.

Best Oatmeal Ever!

Best and easiest oatmeal ever!
So easy and it cooks while you sleep!!

2 cups of rolled oats(not instant)
2 cups of water
1 1/2 cups of milk
1/4 cup brown sugar
1 -2 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoons butter

Put all ingredients in your crock pot and
cook on low for 6-8 hours.
It was the best and creamiest oatmeal
I have ever had.

Quick White/Wheat Bread Dough


3 cups all pourpose flour
2 cups bread flour
1 1/2 cups wheat flour
2 tablespoons sugar
1 tablespoon salt
2 packets quick rise yeast
6-8 cups of hot water
3 tablespoons olive oil

Mix all dry ingredients in your mixer,
add half the water, mix and then slowly add
the remaining water and your oil,
Mix well and cover and set aside and
let rise until doubled in size(about 30minutes).

Meat Rollup

So easy and kid friendly!

1 loaf of premade bread dough or pizza dough(i made my own bread dough)
1/4 cup shredded Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 shredded cheddar cheese
4 slices of turkey bacon cooked and diced
4 slices of Canadian bacon diced
3 slices of ham diced
4 slices of turkey diced
1 teaspoon black pepper
1/2 teaspoon garlic powder
3/4 teaspoon parsley

Preheat oven to 400 degrees and grease your baking sheet, set aside.
Roll your bread dough out into a large circle.
Top the dough with your meat,cheese and seasonings, in
that order. Roll up like a cinnamon roll and place on your baking sheet.
Bake for 20-30 minutes until golden brown.
Slice and dip in your favorite sauce or dip.


**After you have rolled up your bread dough if you would like to freeze
it for later you can. Wrap it up in plastic wrap and then either foil or
freezer paper. Would be good in the freezer for 1-2 months.
*** The day you want to cook your frozen roll up thaw in the fridge before
baking.


My Quick Bread Dough

Fish Taco's

I have never eaten or made fish tacos.
But my husband loves them, so I gave
them a try.
Pretty good and not to horribly
hard to make.


1 1/2 lbs firm fish(i used halibut)
Tortilla's either corn or flour
2 cups green cabbage thinly sliced
2 tablespoons cider vinegar
2 teaspoons salt
2 tablespoons butter
black pepper
Shredded cheese,chopped tomatoes or avocado(optional)


Was and slice cabbage and mix with cider vinegar and salt, set aside.
In a large skillet on medium heat add your butter and fish,
cook until fish is no longer translucent and season with salt and pepper.
Pretty simple, assemble your taco and enjoy.

Crockpot Pork Chops

So good!!!
4 Thick cut pork chops
1 Clove of garlic
1 Teaspoon of black pepper
1 Packed of ranch seasoning
1/2 Cup of chicken broth

Place all ingredients in your crock pot and
cook on low for 6 hours.

So good!!! 
Enjoy with mashed potatoes and a veggie!

Easy Applesauce

Pretty easy once you get past the
coreing and peeling!

1 buschel of apples, peeled,cored and diced
2 cups of sugar
6 tablespoons of cinnamon
1 cup of water(possible more once apples cook down)

Place everything in a large roaster and mix well.
Set roaster on 250 degrees and let cook for
8-10 hours stirring every 2-3 hours.
At this point you can either
leave it more of chunky applesauce or
you can food processor and make it more a smooth
applesauce.

This will keep in the fridge for 3-6 weeks
or you can of course can it.

Crockpot Applebutter

So yummy+So easy+A staple in my house=A MUST!

5 pounds of apples(about 15-16 apples), washed,peeled and chopped(I used a food processor)
1/2-1 cup of sugar
3 Tablespoons cinnamon

Add all ingredients to your large crock pot and cook on
high for 2-4 hours stirring every 1-2hours.
After 2-4 hours turn your crck pot to
low and let cook for an additional 8-10 hours
until the sauce has thickened and is a dark
brown color.
You can store in the refrigerator for up to 3 months covered
or it can be canned.

BBQ Chicken Sliders

Hope everyone has had a wonderful summer.
Ours had been super fun and super busy.
I will be back in the recipe writing once school starts.

Now for the good stuff!

So easy,so good and pretty darn healthy!

Recipe:
1 lb ground chicken breast
1/4 cup plain bread crumbs
1/4-1/2 cup your favorite bbq sauce
1 tablespoon bbq seasoning(dry)
1/2 teaspoon chili powder
1/4 teaspoon red pepper flakes(optional0
1 teaspoon garlic powder
1 teaspoon black pepper
1/4 teaspoon ground cumin
1 teaspoon olive oil
8 slider buns
lettuce
tomato
mayo
bbq sauced for topping

Mix all ingredients together in a large bowl and form in to
eight equal size patties. Heat your olive oil in a large skillet
or grill pan. Cook burgers about 5-7 minutes on each side.
Serve warm!
You could also cook them on your outdoor grill.

Bacon Wrapped Turkey Buger Meatloaf

So I have never really liked meatloaf.
OK I actually can't stand it. But I "eat" it.
But then I ran across this and changed it up a little
to make it mine.
And I may now be a meatloaf lover! :)

Recipe:
adapted from food.com
2lbs ground turkey
1 egg
1/2 cup minced onion
1/2 shredded cheddar cheese
1/2 cup rolled oats
3 tablespoons BBQ sauce
1 teaspoon garlic powder
1 teaspoon black pepper
12 slices of bacon

Mix all ingredients together in a large mixing bowl, set aside.
Line a large baking pan with foil.
Lay 6 pieces of bacon side by side on a sheet of foil, lay
one meat loaf on top of back and wrap the bacon around your
meat loaf, place in baking pan. Repeat with second loaf.
Bake at 400 for 45-60 minutes.

Italian Marinated Roasted Veggies

A nice twist on something
that can become boring... veggies!!

3 cups of chopped brocolie
3 cups of chopped cauliflower
2 cups of sliced carrotts
1 bottle of fat free Italian dressing

Pour all ingredients in a large ziplock bag, mix
well and refridgerate at least 4 hours or overnight.
Remove from refridgerator and bake at
400 for 30-45 minutes.

Low Carb Low Fat Chocolate Peanut Butter Mousse

So very yummy and not
very bad on the waist line!!

Recipe:
slightly adapted from foodnetwork.com

12.3 oz package of silken tofu
1/3 cup creamy peanut butter
1/3 cup of powdered sugar
1/3 cup cocoa powder
4-8 tablespoons fat free milk

Puree tofu in the blender and then add in the
rest of ingredients  and blend until well mixed.
Pour into serving dishes and chill for at least
1 hour before eating.
Makes 8 servings.

Whole Wheat Pasta With Sweet Italian Sausage

This was a big hit at my house!
The hubby loved it and
my pasta lovin daughter thought it
was great!

Recipe:
1 lb Sweet italian sausage (I used links, but ground work great to!)
1 lb Whole wheat pasta
16 oz Your favorite pasta sauce( I used my homemade sauce)
1 Teaspoon olive oil
1/2 Cup diced onion
3 Garlic gloves minced
1 Teaspoon dried oregano
1 Teaspoon dried thyme
1 Teaspoon parsley
1 Teaspoon black pepper
1/2 Cup shredded mozzarella cheese

Cook pasta according to package directions. In a large saute
pan heat olive oil and add in onion and garlic.
Saute until tender mix in remaining spices and add in
the sausage links(i cut my links in to bite size pieces),
cook until sausage is cooked through, add in pasta sauce and bring to
a boil. Boil for 5 minutes and reduce heat to simmer. Simmer for 30 minutes.
Pour sausage and sauce mixture over cooked pasta and toss well.
Serve with shredded cheese on top.

Strawberry Jello Salad

Cold,creamy and yummy!!
Kids love this stuff!!

Recipe:
2 large boxes of strawberry jello
1 quart strawberries cleaned and cut in 4ths
1  8oz container of fat free cool whip
2 cups of miniature marshmallows

Prepare jello according to package directions pour
into a large bowl, ad in cut strawberries and marshmallows,
chill until firm(about 4 hours).
Stir well in cool whip and mix well!

Italian Pasta Salad

Super easy and just in time
for all the summer cook outs and picnics.

Recipe
1 lb cooked and cooled pasta
1 bottle fat free Italian salad dressing
1 6oz can black olives
1 pint cherry tomatoes cut in half
1/2 cup shredded parmesean cheese

Combine all ingredients in a large bowl and mix well.
Refrigerate for 4-6 hours before serving.

Mom's Meatballs

These are one of my favorite things my
mom makes. They are pretty easy to make
and are loved by all who eat them.


1 1/2 lbs ground turkey,chicken or beef
1 egg
1/2 cup bread crumbs
1 teaspoon garlic powder
1/4 cup minced onion
1 teaspoon parsley
1 teaspoon ground black pepper
2 small cans of chicken and rice soup

Mix all ingredients except for the soup in a large bowl.
Roll your meat mixture into golf ball size balls and place in a
skillet on medium-high heat.
Brown meatballs all around and then turn heat down
to medium-low. Add in the soup and continue to simmer
on low for another 30-45 minutes(the longer the better).

These are wonderful! We like to eat them with mashed potatoes
and use the rice soup mixture as a gravy.

Cookie and Cream Cheesecake Bars

These were made especially for a special little
boy that turned 2 this week!!

I asked Max what kind of cake he wanted for his
special family birthday dinner and he said
"cheese,cookies and cake."
So he got the best of all tree!
This was pretty simple to make and
was very,very yummy!

Recipe:
For Filling:
2 1/2 packages of cream cheese-softened
3 tablespoons butter-softened
1 cup sour cream
2/3 cup granulated sugar
2 teaspoons vanilla
4 eggs
2 tablespoons flour
1 cup crushed oreo cookies

For Crust:
2 cups plain animal crackers or graham cracker crumbs
1 1/2 cup crushed oreos
4 tablespoons melted butter

For Topping:
20 crushed up oreos
1 cup melted semi-sweet chocolate chips

Preheat oven to 350
For crust combine melted butter and
cracker/cookie crumbs in your 9x13 inch
pan and mix well, then smooth and press into the bottom of the pan.

For Filling cream butter,sour cream and cream cheese until
smooth slowly mix in  granulated sugar,vanilla and sour cream.
Next add in flour and mix well, lastly stir in crushed up
cookies and pour into the baking pan.

When completely cool top with the remaining
crushed cookies and then drizzle with
melted chocolate, cut into squares and
refrigerate for 4-6 hours before serving.

Chicken and Dumplings

4 boneless skinless chicken breast
4 medium potatoes peeled and chopped
2 large carrot ts peeled and chopped
4 cups of chicken broth
1 can refrigerated biscuits
2 teaspoons black pepper
1 teaspoon salt
2 teaspoons garlic salt
1 teaspoon parsley

In a large crock pot place chicken,seasonings and 1 cup
of chicken broth on low for 8 hours or on high for 4-6 hours.
When chicken is done place all remaining ingredients in a large pot except
for the biscuit dough, bring to a boil and cook until veggies are fork tender.
In the meantime cut each biscuit in to fourths, roll into a ball and
cover with flour, set aside. Once veggies are done, drop all dumplings
into boiling soup mixture and cook until float to the top and
our done one the inside(about 10-15minutes).

Crusty Pork Chops

These are probable the BEST pork
chops I have ever made.
These were super juicy and super tender.
And they were pretty simple to make.

Recipe:
4 boneless pork chops
2 cups milk
2 cups of panko bread crumbs
1 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon sea salt
2 tablespoons olive oil
1 cup chicken broth

Preheat oven to 350
Pour milk into a bowl large enough to hold pork and let
sit for 10 minutes while preparing everything else.
In a shallow dish, mix together the bread crumbs,pepper,salt and garlic
sit close to your cooking area. In a large skillet heat olive oil.
Now take each pork chop and coat it well with the bread crumb mixture and
place in your hot skillet. ONLY cook for about 2 minute on each side,
till the bread crumbs are crusty and then turn off the heat, add chicken broth and cover.
Bake in your preheated oven for 30-40 minutes until cooked through.

Pizza Burgers

These remind me of something we used to get
in the school cafeteria. They turned out pretty good
and the peanut gallery loved them.



Recipe:
1 lb ground beef or turkey
1/2 jar pizza sauce
1 teaspoon garlic powder
1 teaspoon pizza seasoning
3 hamburger buns
6 slices of provolone or mozzarella cheese

Brown beef in a medium skillet, drain grease and return to pan.
Mix in pizza sauce and seasonings, bring to a boil and let simmer
for 15 minutes.
Line a baking pan with foil and preheat oven to 400.
Lay 6 half's of your burger buns on the baking pan.
Top each on with a serving of meat mixture and then top with
the cheese slice. Bake at 400 for about 10-12 minutes until
cheese is bubbly.

Tomato and Tortellini Soup

So yummy and so very easy!!
And on a gross day like yesterday it
was just what we all needed!

Recipe:
2 small cans or 1 large can of tomato soup
1 1/2-3 cups of skim milk
1 package of cheese filled tortellini(cooked according to package directions)
1/4 cup velvetta cheese chopped
1/2 loaf french bread for dipping(optional)

In a large pan cook soup according to package directions,
stir in cheese and stir occasionally until melted and creamy.
Mix in tortellini and let simmer for 30 minutes.

For bread sticks:
Preheat oven to 400 and line
a baking pan with foil.
Cut the loaf of french bread into 8 sticks, and
arrange on baking pan.
Brush with olive oil and then bake
for about 10-15minutes until crispy and golden brown.

Mint Brownies

Think Thin Mint Cookies!


Recipe:
1 1/2 Cups All Purpose Flour
1 Cup Cocoa Powder
1 Cup Granulated Sugar
1 Cup Butter-Softened
3 Eggs
1/2 Teaspoon salt
1 Teaspoon Baking Soda
2 Teaspoons Baking Powder
2 Teaspoons Vanilla Extract
1/2 Milk
1 Bag Semi-Sweet Chocolate Chips-Melted

Preheat oven to 350 and grease a 9x13inch
pan and set aside. Measure all dry ingredients
and set aside. In a large mixing bowl cream
together butter and sugar, add in eggs 1 at
a time, mixing well after each egg. Mix in
cocoa powder,vanilla and milk,blend well.
Add in remaining dry ingredients and mix
until well Incorporated and smooth.
Pour into prepared pan and bake for 35-45 minutes.

For Frosting:
1 1/2 Cups Powdered Sugar
1/4 Butter Softened
3 Tablespoons Milk
2 Teaspoons Peppermint Extract
Green Food Coloring

Beat butter until smooth, slowly add in
powdered sugar and milk, mix well.
Mix in peppermint extract and
green food coloring.

Spread frosting over cooled brownies and
then top the frosting with the melted
chocolate chips.

Steak Fajiatas

2 Sirlion Steaks or Rounds Steaks Pounded Thin and Cut into Strips
1 Package Fajiata Seasoning
12 Flour or Whole Wheat Tortiallas
1 Cup Shredded Monetary Jack Cheese
Misc Chopped Veggies
Taco Seasoning
Sour Cream

In a large skillet, sear all your steak strip add in seasoning
and continue to cook until done.
Serve on warm tortialls with your choice
of toppings.

Chicken Noodles

Recipe:
2 Boneless/skinless chicken breasts
1 Teaspoon Black Pepper
3 Cups Chicken Broth
1 lb Favorite Noodle's(we love the old fashion/Amish style)*
**cooked according to package directions**

In a large crock pot, add 1 cup chicken broth,chicken breasts,and
black pepper. Cook on low for 8 hours until chicken is falling apart.
Once chicken is done add your cooked noodles and remaining broth.
Let cook on low for an additional 1 hour.
Serve over mashed potatoes.
This recipe makes enough for left overs and to freeze.

Spagetti with Meat Sauce

No pics :(

Recipe:
12 oz whole wheat pasta-cooked according to package directions
1 lb ground turkey
1/2 small onion diced
1 glove garlic minced
1 cup fat free cottage cheese
1/4 cup grated parmesan cheese
1 teaspoon italian seasoning
1 recipe Amanda's Pasta Sauce
1 teaspoon olive oil

In a large skillet saute onion and garlic in olive
oil, add ground turkey and cook till meat
is done. Mix in the pasta sauce,cottage
cheese,parmesan cheese and italian seasoning, bring
to a boil and let simmer for 30 minutes(until
cottage cheese breaks up).
Stir in cooked pasta and remove
from heat.

Strawberry,Cranberry and Almond Oat Bars

These are to die for!!
So easy,so yummy and really good for you!
And my kids LOVE them!

Golden brown and crispy
So good!!!

Recipe:
1 1/2 cup whole wheat flour
1 1/2 cup rolled oats
1 1/2 teaspoons baking soda
1 teaspoon baking powder
3 tablespoons fiber powder(optional)
1/2 cup chopped almonds
2 eggs
1/2 cup brown sugar
1 teaspoon vanilla
1/2 cup butter-melted
1 cup chopped dried cranberries
1 1/2 cup all fruit-no or low sugar strawberry preserves

Preheat oven to 350.
In a small bowl mix dried fruit and preserves until
blended,set aside.
In a medium mixing bowl combine rolled oats,flour,
almonds,brown sugar,melted butter,eggs,baking soda,
and baking powder. Divide in half and press half down
into the bottom of 9x13 inch baking pan.
Spread fruit mixture on top of oat mixture and then top
with the remaining oat mixture, spread evenly and
lightly press down.
Bake in a preheated oven for
20-30 minutes, until golden brown.

Vanilla Almond Baked French Toast

This is DELICIOUS!!



Was perfect with a little butter melted on top!!

So easy and so yummy!

Recipe:
1/2 loaf french bread cubed
6 eggs
1 cup skim milk
2 teaspoon cinnamon
2 teaspoons vanilla extract
1/2 cup chopped almonds(optional)

Place bread in a butter 9x13 in baking dish and set aside.
In a large bowl, mix together well; eggs,milk,
seasonings and vanilla extract.
Poor mixture over bread
and smash bread down, till well coated,
let stand in the refrigerator for 1-24 hours
before baking.
Bake at 350 for 35-45 minutes,
until knife comes out clean.

Lowfat Chicken Almond Pasta

This turned out better then I had thought it
might!!! It was really good, and the best part..
THE KIDS LOVED IT!!


Recipe:
2 boneless skinless chicken breast-cubed
1 lb whole wheat pasta(rotini or penne work great)
1 cup blanched almonds
1 glove garlic
1/2 -3/4 cup of skim milk
1 cup reduced fat parmesean cheese
1/2 teaspoon italian seasoning
1/2 italian parsley
1/2 teaspoon black pepper
1/2-1 teaspoon salt
1 cup reserved pasta cooking water

Prepare pasta according to package directions.
In the blender or food processor: add almonds,1/2 cup milk,

all the seasonings,garlic clove and 1/4 cup of the parmesan cheese.
Blend until smooth and creamy, transfer to a large pan.
Bring sauce to a boil, adding more milk if to thick, at this point
taste to check the need for salt. Add pasta and chicken to
the sauce, mix well and then stir in remaining cheese
. If sauce is to thin add in some of
the reserved pasta water a little at a time until
desired consistency
Want to make it extra healthy? Add chopped and steamed
carrots,broccoli and/or cauliflower.

Sunday March 13- Easy Meal or Left Overs

Cheese Steak Sandwhich

Cheese and steak together?
Does it get much better?
I vote no!



Recipe:
2 lbs beef steak thinly sliced(I used patio steaks, flank or skirt would work well)
1/2 onion sliced
2 teaspoons of black pepper
1 teaspoon garlic powder or 1 clove minced
1 teaspoon salt

In a large pan or skillet place all
ingredients and saute until
meat is tender and cooked through about 12 minutes.
 

For Cheese Sauce:
1 lb yellow cheese(cheddar or colby jack)
2 tablespoons butter or margarine
4 tablespoons flour
1/2 cup milk

Melt butter in a medium sauce pan, add
flour and black pepper and mix until flour is cooked
out(2 minutes). Add in milk and whisk
until most of the lumps are gone, add in cheese.
Cook on low stirring occasionally until cheese
is melted and the sauce is thick and smooth.

Place your steak and onions in a large bun top
with cheese sauce and enjoy.

Chocolate Cupcakes

These cupcakes turned out so
great!! They are rich and moist, I
couldn't even wait to post it before I
got a picture of it.
You MUST try these!!

Recipe:
1 1/2 cup flour
3/4 cup cocoa powder
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1/2 cup water
2 eggs
3 tablespoons oil or melted butter
1 tablespoon lemon juice or vinegar

Preheat oven to 350, place cupcake liners
in your muffin pan and set aside.
Pour milk and lemon juice or vinegar in a small bowl
set aside for 5 minutes and then microwave
for 1 minutes. Sift together flour,sugar,cocoa 
powder,salt,baking soda and baking powder.
Stir together the eggs,oil,warm water and
milk mixture. Add to the dry ingredients and mix
well. Fill muffin cups 3/4 of the way
full and bake for 15 minutes.
 


Frosting:
1/4cup shortening or butter
3/4 cup peanut butter
1/4 cup milk
3/4 cup cocoa powder
1 1/2 cup powdered sugar

In the bowl to your stand mixer,
cream together shortening and peanut butter.
Add in milk and cocoa powder, mix well.
Finally mix in all of the powdered sugar and

mix until smooth and creamy. Pipe or
spread on top of cooled cupcakes and
if desired top with a peanut butter cup.
